Ricotta Pesto Toast

It’s doesn’t get much better than this garlic pesto brunch toast. It’s got all my favourite flavours going on and is so fresh and versatile. Add a poached egg and balsamic glaze, squeeze of lemon and cracked pepper, dress it up how ever you like! But do yourself a favour and give it a go. We used our gluten free focaccia loaf but you can use any loaf of bread you like. It will go great with our Artisan loaf also which adds a great crisp texture when toasted. All our breads you can find in store.

Ricotta Pesto Toast - Gluten Free -Recipe

Ingredients

  • 3 Tablespoon Ricotta Cheese

  • 2 Clove Garlic Confit - Recipe found here

  • 2 Tablespoon Basil Pesto - Recipe found here

  • 1 Slice of any kind of Bread you like

  • 1 Handful of Rocket

  • 10 Cherry Tomatoes

  • 20gm Shaved Aged Parmesan

Instructions

  1. Blister your cherry tomato’s in a small pan with olive oil on a low heat until just starting to break down.

  2. Assembling the toast:

    1. In a bowl, mix together ricotta cheese & pesto. 

    2. Lightly toast the bread of choice.

    3. Squeeze the confit garlic cloves out of its skin and spread it on top of the toast with a knife.

    4. Spread some of the ricotta-pesto over the toast, the amount is up to you.

    5. Add the handful of rocket to the toast.

    6. Add warm blistered tomato’s on top of the toast (amount is up to you).

    7. Season with black pepper, shaved Parmesan and top with fresh basil (optional).

    8. Serve with a wedge of lemon or a drizzle of balsamic vinegar, add on a poached egg and bacon for an even more delicious brunch.
