‘Eat Your Greens’ Soup
This vegetable based soup is the perfect way to fight off the winter chill. Packed full of green veggies its super nutritious and is even better the next day reheated. With all the herbs spices and aromatics to enhance the flavours of the vegetables, this one definitely doesn’t taste like cut grass, and actually keeps its vibrant green colour when you reheat it. It’s naturally gluten free and dairy free as the cream garnish is optional and can be substituted for coconut cream or Flora Plant. Paired with our AWPC Artisan loaf it makes for a beautiful lunch or supper.
Ingredients
1 Leek diced (white part only)
1 Zucchini diced
1 Potato diced
3 Celery stems diced
1 bunch baby Broccoli chopped
1 cup frozen Peas
2 teaspoon minced garlic
1/2 teaspoon cumin powder
500ml Vegetable stock/Chicken Stock
1 Lemon using the zest and Juice
1 small bunch of fresh basil
1 bunch of Silverbeet leaves
120gm Baby Spiniach
Salt & Black Pepper
2 tablespoon olive oil

Instructions
Sauté : Heat the olive oil in a large saucepan on a medium high heat. Add in your leek, potato, celery, broccoli, & zucchini and cook for 5 minutes.
Add in your peas, garlic and cumin powder and cook for a further 2 minutes.
Add in your vegetable stock and simmer for 7-8 minutes until vegetables are tender. ( Chicken stock can be used as an alternative to veggie stock and tastes just as good. Massel brand have a great vegetable based chicken stock for those wanting plant based.
Fold in your silverbeet leaves and your baby spiniach and let them wilt in the heat and then blitz with a stick blender.
Using a micro plane add in the fine zest of half a lemon and a squeeze of fresh juice. Season with salt and pepper to taste.
Garnish with a swirl of fresh cream or for a dairy free alternative you can use coconut cream or flora plant. Top with a zest of lemon and cracked pepper. Serve with our toasted artisan loaf grilled with Parmesan cheese for that added kick of flavour!
